Pasta is one of my absolute favorite dishes, and nothing beats fresh, homemade pasta. Today, I'm sharing with y'all my recipe for semolina pasta dough. This recipe makes enough for four servings.
Fresh Semolina Pasta Recipe
Start by dusting a clean work surface with semolina flour. Add 1 1/2 cups of semolina flour to a large mixing bowl and create a well in the center. Crack two large eggs into the center of the well and add a pinch of salt. Using a fork, whisk the eggs and slowly begin incorporating the flour into the egg mixture. Continue whisking until the dough starts to come together, then use your hands to knead the dough for 10-15 minutes. The dough should be smooth and elastic.
Once you've kneaded the dough, wrap it in plastic wrap and let it rest for at least 30 minutes.
Semolina Pasta Dough Recipe
To roll out the pasta, cut the dough into four equal pieces and roll them out using a pasta machine. Start at the widest setting and gradually move the rollers closer together until the pasta is your desired thickness. Cut the pasta into the desired shape, then let it dry for at least an hour.
Ingredients:
- 1 1/2 cups semolina flour, plus extra for dusting
