There's nothing I love more than a good pasta dish, especially during the warmer months. And this cold pasta salad with flavorful meatballs is the ultimate summer comfort food. It's easy to make and perfect for picnics, potlucks, or just a lazy afternoon lunch on the patio.
Ingredients:
For the meatballs:
- 1 pound ground beef or turkey
- 1 egg, beaten
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1/4 teaspoon black pepper
For the pasta salad:
- 1 pound pasta, cooked and cooled
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup sliced black olives
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
Instructions:
- Preheat the oven to 400 degrees F.
- In a large bowl, combine the ground beef or turkey, egg, bread crumbs, Parmesan cheese, garlic, parsley, salt, and pepper. Mix well with your hands.
- Roll the mixture into small meatballs, about 1-inch in diameter. Place the meatballs on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 20-25 minutes, until browned and cooked through.
- In a large bowl, combine the cooked pasta, cherry tomatoes, red onion, black olives, feta cheese, parsley, and basil. Toss well to combine.
- When the meatballs are done, add them to the pasta salad and toss again to combine.
- Serve immediately, or cover and refrigerate until ready to serve.

- Cilantro leaves- chopped (optional)
For the dressing:
- Extra virgin olive oil- 1/4 cup
- Lemon juice- 2 tbsp.
- Garlic cloves- minced, 1 or 2
- Balsamic vinegar- 1 tbsp.
- Salt and pepper
Instructions:
- Cook the macaroni according to package directions.
- Drain and rinse with cold water to stop the cooking process. Drain again and transfer the macaroni to a large bowl.
- Add the chicken, tomatoes, olives, cheesed, capers, onion, and cilantro. Gently toss to combine.
- To make the dressing, mix together the olive oil, lemon juice, garlic, vinegar, salt, and pepper in a small bowl.
- Pour the dressing over the macaroni mixture and toss gently to coat.
- Cover and refrigerate the salad for at least an hour before serving.
- Before serving, give the salad a good toss to redistribute the dressing and adjust the seasoning with more salt or pepper if needed.
