Lunch Box Pasta Salad Recipe
Ingredients:
- 8 oz. fusilli pasta
- 1/2 pint grape tomatoes, halved
- 1 medium zucchini, diced
- 1/2 cup canned corn, drained
- 1/4 cup chopped fresh basil
- 2 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- 1/2 tsp. garlic powder
- Salt and black pepper to taste
Instructions:
- Cook fusilli pasta according to package directions. Once cooked, drain and rinse under cold water. Set aside.
- In a large mixing bowl, combine the cooked pasta, grape tomatoes, zucchini, canned corn, and chopped basil.
- In a small mixing bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and black pepper.
- Pour the dressing over the pasta mixture and toss until combined.
